The earthquakes took longer than a day. The mountains were created (and resulting folding were caused) by the African Plate and the North American plate slamming into each other. Then over millions of years, the mountains eroded and because the harder stuff was on the top, you get left with these synclines at the tops of the mountains/hills. (The layers are the opposite way you would expect them to be in a normal mountain forming episode.)
